Info Oil: Extraction
The olive oil production is based exclusively on the mechanical extraction process. The olive crushing can be carried out either by the "mechanical crushers" (hammers, discs, rollers, wheels etc.) or by the stone wheeled mullers.
During the milling process, olive pasta should not undergo high temperature treatment , however, the temperature of 27 degrees should be provided.
Mainly, the oil production includes 5 basic phases:

1) Preliminary operations
2) Milling
3) Oily must extraction
4) Separating the oil from the vegetable water
5) Storage, clarification, olive oil bottling
