Extra virgin olive oil is alimentary oil rich in monounsaturated fat obtained from the mechanical crushing of the olives, the fruit of the Olea europea species.

The olive (olea europea sativa) is a species of small ever-green tree in the family Oleacee. There are numerous varieties of the olive trees with more than 700 local types, known as "cultivar", spread over the whole territory of the Mediterranean coastal area, out of which Italy remains the biggest producer of the qualitative olive oil.
