Info Oil: The olive harvest
The olives are gathered directly form the olive tree beating the leafy branches with sticks to make the fruit fall into the net arranged around the tree from where the olives are gathered later.

More modern technique, however, implies the use of the mechanical devices that shake the branches of the tree and the olives fall in a net arranged on the ground that greatly facilitates the process of olive gathering and at the same time causes only very minimal damage to the olive tree.
Important for a later extraction of virgin oil is also the method of olive storage.
Ideally, it should be ensured that the olives are gathered into the plastic "well-aired boxes" , the boxes are kept away from the hot sun and that the olive are "crushed" in 18-24 hours from their gathering.
